George Georgoudis has been working in his family's Russell Street Vito's Restaurant since it opened in 1972. He says, "At that time, it was more or less a take-out and you could see our fathers and uncles making pizzas. We made and still do, hand-stretched pizza and every pizza was made by flipping it in the air. It was such a novelty, people would sit and watch them make pizzas all day and wouldn't leave. We ended up putting up a partition so that people would eat and go." Besides pizzas and pastas Vito's most popular dish and biggest seller is Chicken Caesar which is a trademark registered throughout Canada. It is Boneless Breast of Chicken with Italian ham spiced with Mozerella cheese in the middle and rolled, served with rice pilaf and caesar salad. Vito's is definitely a family business. All sauces are homemade, and nobody except family members know what spices are in their secret recipe. The mothers contribute a mouth-watering dessert - Vito's cake - a fluffy white cake with custard in the middle and a whipped coconut topping on the top. Billy's
